Vanilla Chocolate Brownies

Sunday baking day! That’s our motto, usually. Last weeks we didn’t have that much time to bake, unfortunately, but we will get back to it! Luckily we always have a lot of recipes saved, because we always make pictures and write down the recipe when we make something. Actually, I made these vanilla brownies last year (!) when a friend of ours was finalising his thesis during the summer holiday. I brought these brownies to cheer him up during studying, and I think it worked! He loved it. Now it is the same period again as last year, only now we are also graduated! So besides working, we have time to get some rest and enjoy the holiday, with these lovely vanilla brownies! Who are you going to cheer up with these delicious brownies?

Ingredients:

  • 2 eggs
  • 100 g vanilla yoghurt without sugar
  • 2 tsp of brown sugar
  • 140 g of whole wheat flour
  • 80 g of coconut milk
  • 3 tsp of cocoa powder
  • 30 g of dark chocolate chips

Instructions:

Preheat the oven at 180 degrees Celsius. Whisk the eggs in a bowl. Add the vanilla yoghurt and the coconut milk. Whisk it until everything is mixed together. In a separate bowl, mix the brown sugar, baking powder, white & whole wheat flour and cocoa powder together. Add the dry ingredients to the wet ingredients and mix it together with a spatula until everything is combined. In the end, add the chocolate chips. Cover a cake mould (we used a round shape) with a baking sheet and add the batter in the cake mould. Put the cake in the oven for about 30 minutes. Let it cool down a bit before serving. Enjoy!

Optional: serve it with some yoghurt, clotted cream or powdered sugar.
Also really tasty with fresh fruits!

112 calories – 3.5 g fat, of which 1.6 g saturated – 16.4 g carbohydrates, of which 2.5 g fibre and 2.6 g sugar – 5 g protein
