I made this recipe by actually throwing some ingredients together. We’re sometimes asked how we come up with all these recipes… But it’s really just a matter of trying a lot of things. At some point you find out what kind of combinations are tasty (or not ๐ ). This was a combination that turned out extremely good! This recipe owes its name to a good friend of mine. She had already asked for the recipe when it appeared in our story on Instagram. She and her boyfriend liked it very much and called it ‘Sweet Potato Smash’. This is due to the fact that in the end all the ingredients are mixed together so that it becomes a smash. While I’m writing this I already feel like making it again, because oh this taste for more!
Ingredients (2 persons):
- 2 sweet potatoes
- 1 can of chickpeas (400 grams)
- 300 grams of spinach
- 1 avocado
- 40 grams of white cheese (feta)
- 1 tbsp of olive oil
- 2 tsp of black pepper
- 2 tsp of cumin spices
- 2 tsp of rosemary spices
- 4 tbsp of low fat quark
- 1 tbsp of tahini
- 1 tbsp of lemon juice
- A little bit of water
Instructions:
Clean the potatoes and cut them into small cubes (you can leave the skin around them). Put the olive oil in the pan and fry the potatoes with the spices. Take the chickpeas out of the can without the moisture and roast them in a pan with the spices. Also fry the spinach in a pan. Meanwhile, cut the peppers and avocado into slices. Put the low fat quark with the tahini, lemon juice and water in a bowl and mix it together.Divide everything over two plates and crumble the feta over the plate. Before you start mixing everything up, take a picture ๐ And then mix it all up!
Options: You can also use goat cheese instead of feta.
