Sweet potato brownies
Brownie with vegetables? UGH, how can that be tasty? Well, we can ensure that you won’t taste a thing! The potatoes give the brownies a great smooth texture and you won’t even feel that there is sweet potato added. Actually, in this way it is so easy to add vegetables to baking recipes to increase your vegetable consumption. It is tasty, nutritious and finished before you know it. So make sure you have enough ingredients so you can make a second batch right away!
Ingredients for 8 pieces of brownie:
- 400 g of sweet potato
- 2 eggs
- 100 g of whole wheat flour
- 5 tbsp of cocoa powder
- 2 tbsp of dark chocolate chips
- A drop of vanilla aroma
- 1 tsp of baking powder
- A pinch of salt
- Optional: 2 tbsp of honey
Clean the sweet potatoes and cut them in small pieces (you can keep the skin if you want). Boil the potatoes for around 15 – 20 minutes, until they are soft. Mash the potatoes and set it aside so it can cool down. Preheat the oven at 180 degrees Celsius. Mix the flour together with the baking powder, cocoa powder and salt in a bowl with a whisk. Add the eggs and vanilla aroma and whisk it together. Now, also add the sweet potatoes and mix it all together. Lastly, add the chocolate chips and stir this through the mixture. Put a baking sheet in a brownie or cake tin. This has to go in the oven for around 35 minutes, but keep an eye on it. The brownies can still be a bit moistures from the inside. Let it cool down a bit before serving.
Optional: add raspberries, blueberries or coconut for an extra flavour touch!

122 calories – 3.2 g fat, of which 1.4 g saturated – 21.2 g carbohydrates, of which 4.1 g fibre and 3.8 g sugar – 4.6 g protein
