Spicy pepper couscous salad

Couscous salads are usually fresh and easy to take with you. This couscous salad is definitely fresh, easy on the go, but we are taking this one to the next level with… SPICES! Never boring and the goat cheese will make sure the spiciness is not too much. Also, 2 tsp of chilli flakes is not too much, right? If you don’t like the spicy touch, you can leave out the chilli. If you LOVE chilli, just add a bit extra!

Ingredients for two portions:

  • 150 g couscous
  • 200 ml of boiling water
  • 2 tbsp of olive oil
  • 1 clove of garlic
  • 1 small onion
  • 2 sweet peppers
  • 10 cherry tomatoes 
  • 2 tbsp of tomato puree 
  • 2 tsp dried chilli flakes
  • 0.5 tsp of (smoked) paprika powder
  • A pinch of salt & pepper
  • A pinch of cumin powder 
  • +/- 40 g of soft goat cheese 
  • 2 handful of mixed lettuce


Heat 1 tbsp of olive oil in a pan on medium heat. In the meantime when the oil heats up, chop the onion and garlic. Add this in the pan together with the chilli flakes, and fry this for around 5 minutes. While this is frying, cut the peppers in half, take out the seeds and slice it. Add this in the pan. Bake this again for around 5 minutes. Now, cut the cherry tomatoes in quarters and add this to the pan as well. Also, add the tomato puree, (smoked) paprika powder, cumin, salt and pepper. Stir everything well together and bake this for 10 minutes on low heat with the lit on the pan. After these 10 minutes, you can take it off the stove. In the meantime, boil the water in a kettle. Put the couscous in a small pot or a bowl. Pour the water on top of the couscous, add 1 tbsp of olive oil, mix it with a spoon and cover it. Set aside for around 10 minutes. Now, mix the couscous well with a spoon and add this to the pepper/tomato mixture. Mix everything well together with a spoon. Divide the lettuce into two plates, add the couscous on top and finish it by crumbling the goat cheese on top of the couscous. Enjoy!



  • Instead of dried chilli flakes, you can also add fresh chilli!
  • Grill the pepper in the oven instead of baking it in the pan.
