Protein Chocolate Pancakes

Sundays are for great breakfasts, like this one. You just have a bit more time to prepare and surprise your loved ones with a good and delicious start of the day. Pancakes are a classic Sunday breakfast for us. It is so easy to make a healthier version of pancakes, even with a bit of protein you make it healthy and more filling. The frozen fruit in the pancakes make it very fresh and you want to eat the whole stack in once! Enjoy!

Ingredients for two portions:

  • 1 banana
  • 1 egg
  • 60 g of whole wheat flour
  • 30 g of protein powder
  • 2 tsp of cocoa powder
  • A dash of milk 
  • A hand full of blueberries/raspberries
  • A pinch of salt
  • Oil for baking the pancakes, we always use olive oil or coconut oil

Instructions:

Easy peasy, believe us. You just put the banana, egg, whole wheat flour, protein powder, cocoa powder, salt and a dash of milk in a blender and blend it until the mixture is smooth. In the meantime, heat 1 tsp of oil in a pan. Finish the pancake batter by adding some blueberries or raspberries and stir this carefully through the mixture. Pour some batter in the pan, make them just as big as you like it! Bake it for about 3-5 minutes each side, when on medium heat. Flip them when the top of the pancake gets ‘baked’, so the liquid becomes solid. Continue until the batter is finished. 

Optional: serve it with a bit of quark, yoghurt or jam. 

 

Nutritional value per person:

266 calories – 4.65 g fat, of which 1.5 g saturated fat – 40,8 g carbohydrates, of which 6.4 g fibre and 9.9 g sugar – 18.8 g protein
