High protein lunch

Easy, healthy and tasty. Those three aspects are the key aspects if you ask us. Food has to be easy to prepare and especially if you have a busy day it is nice that is doesn’t take much time to prepare it. Healthy, also important! We want that our food is full of good nutrients so we feel energized after eating it. And then, maybe one of the most important aspects, TASTY. Yes, of course food has to be tasty, is what you might think. Sometimes, people find it hard to believe that these three aspects can be combined together and that is something what we are always aiming to try. This recipe is a great example of it! Food can definitely be easy, healthy and tasty at the same time 🙂 

 

Ingredients for 1 person:

  •  1 egg
  • 2 tbsp of cottage cheese
  • 5 tbsp of chickpeas
  • 1/2 avocado
  • 6 big slices of cucumber
  • +/- 100 g of chicken 
  • 2 tsp of olive oil
  • 1 tbsp of pumpkin seeds
  • 1 tsp of curry spices
  • A pinch of salt and pepper
 
Instructions:
Preheat the oven at 180 degrees Celsius. Drain the chickpeas and wash them. Put them in a bowl and mix it with 1 tsp of olive oil. Now, put a baking sheet on a baking tray and add the chickpeas on top. Do this in the oven for around 20 minutes. In the meantime, heat 1 tsp of olive oil in a pan and bake the egg for around 2 minutes. Cut the chicken in pieces. Take the egg out of the pan and add the chicken. Bake this for around 7 minutes on medium heat. Add the curry spices to the chicken and bake 2 minutes longer until the chicken is completely cooked. Cut the avocado in half, remove the skin and slice half of the avocado in pieces. Put the egg on a plate together with the chicken, cucumber, avocado and cottage cheese. Sprinkle the sunflower seeds on top and add some salt and pepper. Enjoy!

 

Options: Add some red chili flakes on top for the extra spicy touch.

 

Nutritional value:

498.7 calories – 30.7 g fat, of which 5.5 saturated fat – 23 g of carbohydrates of which 8.8 g fibre and 5.1 g sugar – 36.7 g protein
