Healthier gingerbread cookies

This recipe kind of reminds us of our childhood. Coming back from a long school day and enjoying a nice cup of tea and some cookies. YUM! Especially those cookies that you can dunk in the tea, we love it! Do you know speculaas cookies? Or in other words, gingerbread cookies? These are typical Dutch cookies and can be found in every store. The only thing, maybe you can guess it already, is that these cookies are so so so unhealthy… they contain loads of sugar! Therefore, we tried to make a healthier version. I wouldn’t say these cookies are super healthy, but at least they are healthier (and just as tasty) as the normal gingerbread cookies. That’s already good, isn’t it? Eventually, it is all about balance…

 

Ingredients for a small batch:

  • 130 g of flour; we used 80 g whole wheat flour & 50 g of oat flour 
  • 40 g of butter
  • 40 g of coconut oil
  • 30 g of brown sugar
  • 10 g of gingerbread -speculaas- spices – click here to see which spices we used!
  • 1 tsp of baking powder
  • A little dash of milk – 1 tbsp
  • A pinch of salt

Instructions:

Put the butter out of the fridge, so it can adjust to room temperature. Preheat the oven at 180 degrees Celsius.  It is actually very easy, just take a bowl and put all the ingredients in here. The order doesn’t matter! Just make sure you cut the butter in small cubes and leave the coconut unmelted. Then, use your hands to knead all the ingredients together and to form a ball. Use a rolling pin (or your hands, that works perfectly) to shape the cookie(s) into a big square, so you end up with one big cookie. No cutting yet! Place a baking paper on a baking tray and put the dough on top. Bake this in the oven for 20-25 minutes. Then take it out of the oven and cut with a knife the shape of the cookies (do this right away because the cookies will still be a bit soft). Now let it cool down so the cookies will get hard and crunchy. Serve it with some hot tea or coffee and dunk it! 🙂

 

Optional: add one teaspoon of cocoa powder to give it a tiny touch of chocolate!

 

Nutritional value per cookie (when cutting into 10 cookies):

122 calories – 7.7 g fat, of which 5.4 saturated – 10.8 g carbohydrates, of which 3 g sugar and 1.3 g fibre – 1.7 g protein
