Creamy Pasta Salad
Oh my, this creamy delicious pasta is amazing! So easy to make and full of healthy ingredients. This pasta is not only delicious for dinner, but we also highly recommend to eat this for lunch! Guaranteed full the whole day. And the avocado cottage cheese sauce makes this a tasty creamy pasta! A delight for the eye, but also for your taste buds.
Ingredients for 4 persons:
- 300 grams of whole wheat pasta
- 400 grams of chicken breast
- 500 grams of broccoli
- 2 paprika’s
- 2 avocado’ s
- 400 grams of cottage cheese
- lemon juice
- black pepper
- 1 tbsp of chili flakes
- 1 tbsp of chives
Cook the pasta according to the instructions on the packaging. In the meantime, cut the chicken breast into cubes. Also cut the broccoli into small florets and cut the paprika into small pieces.
Put a little olive oil in the pan and fry the chicken breast until golden brown.
In the meantime, cook the broccoli for about 5 minutes. Meanwhile, peel and mash the avoado and season with lemon juice and black pepper. Then mix the cottage cheese, chives and chili flakes with the mashed avocado.
Then spoon the pasta, chicken, broccoli, paprika and the avocado cottage cheese sauce into a bowl and mix well.
You can also put some nuts through the pasta.
