Fresh Endive Chicken Wraps

We love easy and healthy recipes. This chicken wrap is one of those recipes that is easy to make and so delicious. When we lived together in Venlo we often made this recipe. You’ll get enough vegetables to satiate you all evening. The combination with endive, tomato and avocado are making this dish a light and refreshing. 

Ingredients for 2 persons:

  • 4 whole wheat tortilla wraps
  • 1 avocado
  • 4 tomatoes
  • 200 grams of chicken breast
  • light salad dressing
  • 1 tsp chili flakes
  • 1 tsp black pepper
  • 1 tbsp lemon juice

Instructions:
Mash the avocado in a bowl and mix it with the lemon juice, chili flakes and black pepper. In the meantime, fry the chicken breast until golden brown. Cut the tomatoes in slices. Put the avocado mix on the wrap together with the endive, tomatoes and chicken breast. Finish it with a little bit of the salad dressing. 

Options: Instead of endive you can also use other vegetables.
