Falafel flatbread

Oh, how much do we love easy recipes! Now with this lovely weather outside, no one wants to be in the kitchen for too long, am I right? The total cooking time of this recipe will be around 20-30 minutes, but you almost don’t have to do anything. How lovely does that sound? A couple of days ago we shared with you a sweet flatbread recipe, so we thought it is worth it to share the savoury one as well. Which one do you think will taste better? Only one way to find out!

Ingredients for 2 flatbreads:

  • 150 g of whole wheat flour
  • 100 ml of yoghurt
  • 1 tsp of baking powder
  • A pinch of salt

Ingredients for the topping:

  • 2 tbsp of plain or spicy hummus
  • 1/2 cauliflower
  • 10 pieces of falafel 
  • 2 tsp of pomegranate seeds
  • 1 stem of spring onion
  • 2 tsp of olive oil
  • 1 tsp of paprika powder
  • A pinch of chilli powder, salt & pepper

Instructions flatbread:

Mix all the ingredients for the flatbread together. Knead the ingredients until it forms a dough, do this with your hands. Now, let it rest for around 15 minutes. After resting, divide the ball into two pieces. Use a rolling pin to make the flatbreads thin, if not thin, it won’t be cooked enough. Heat some oil or butter in a pan and bake the flatbreads around 5 minutes each side on medium heat.

 

Instructions toppings:

Preheat the oven at 180 degrees Celsius. Cut the cauliflower in small pieces. Put this in a bowl together with 1 tsp of olive oil, paprika powder, chilli powder, salt and pepper. Put this in the oven for around 20 minutes. In the meantime bake the falafel in a pan on medium heat, with 1 tsp of olive oil for around 5-10 minutes until they’re heated. Then, slice the spring onion. 

First, put 1 tsp of hummus on each flatbread. Finish it with falafel, cauliflower, pomegranate seeds and the spring onion. Ready to eat, enjoy!

592.8 calories – 19.8 g fat, of which 3.5 g saturated – 72.7 g carbohydrates, of which 10.8 g sugar and 16.6 g fibre – 22.5 g protein
