Easy Banana Cake

This is one of our favourite banana cake (bread) recipe, because it it so easy! It’s the recipe that comes to mind first when we have leftover (overripe) bananas). Make this banana bread at the beginning of your working week so that you have every day a tasty snack during your break! The great thing about banana cake is that you can eat it for breakfast, lunch, but you can also have a slice of it with your tea. That way you know that you always have a tasty and healthy snack in stock. 

Ingredients:

  • 100 g of oat flakes
  • 50 g of whole wheat flour
  • 3 (overripe) bananas
  • 3 eggs
  • a pinch of salt
  • 1 tsp of baking powder
  • 2 tbsp of cinnamon
  • Raisins by preference
  • Unsalted nuts by preference
 
Instructions:
Preheat the oven at 180 degrees Celsius. Mix the eggs, bananas, cinnamon and salt until you have a smooth mass. Then add the oatmeal, whole wheat flour and baking powder and mix again. Finally, stir the raisins and nuts through the batter. Spoon the batter into a greased form and bake for 45-60 minutes. 


Optional:
For those with a sweet tooth, you can also add some dark chocolate or coconut flakes. So yummy!

182.2 calories – 6.7 g fat, of which 1.0 saturated – 29.6 carbohydrates, of which 3.6g fibre and 12.1 g sugar – 4.2 g protein
