Crunchy Cookies

Cookie time! Isn’t there a better start of the week than knowing that you can enjoy a delicious homemade (healthy) cookie during your coffee break? These cookies are perfect to give you that extra energy boost needed on Monday. Full of nuts to keep you satisfied the whole morning! Ready to rock your day. 

Ingredients for 8 cookies:

  • 100 grams of oat flakes
  • 50 grams of whole wheat flour
  • 75 grams unsalted nuts
  • 50 grams of dark chocolate
  • 1 flavour shot vanilla aroma (we always use the flavour shots of personal protein)
  • 2 eggs
  • 30 grams of olive oil
  • 1 tbsp of baking powder
  • 1 tbsp of cinnamon
  • 1 tbsp of gingerbread spices

Preheat the oven at 180 degrees Celsius. Mix all the dry ingredients in a bowl (oat flakes, whole wheat flour, nuts, chocolate, baking powder and cinnamon/gingerbread spices). Add the flavour shot, eggs and oil to the dry mixture and mix everything together until you have sticky dough ball. 

Roll out the dough ball into a rectangular slice and cut it into your own shape. Then lay the cookies on a baking paper. Bake the biscuits approximately 25 minutes in the oven (depending on your oven). 

Let the biscuits cool down for a while and then you can enjoy these delicious biscuits. Yummy!


You can also put some raisins and apple through the dough.

240 calories – 20.7 g carbohydrates – 14.7 g fat – 3.7 g saturated fat – 7.6 g protein – 3.2 fibre – 2.5 g sugars
