Chocolate banana bread
Breakfast, snack or dessert? You choose! This chocolate banana bread can be eaten any moment. Eat a couple of slices for breakfast with some fruit and maybe a big spoon of yoghurt or quark, and we can guarantee you that you will have a powerful breakfast. Are you the kind of person that prefers a savoury breakfast? Don’t worry! This banana bread can be perfectly eaten as a snack during the day, or even as a dessert with a big spoon of vanilla ice cream. The texture is quite dense and smooth. This gives it fudge a kind of texture, we love it! The chocolate chunks give it the extra chocolate hint that you need. The banana gives this cake a delicious sweet taste! At which moment would you consume this delicious no-guilt chocolate banana bread?
- 3 banana’s (preferably really ripe)
- 100 g of vanilla or plain quark
- 2 eggs
- 20 g of cocoa powder
- 180 g of spelt, oat or whole wheat flour
- 50 g of dark chocolate
- 1 tsp of baking powder
- A drop of vanilla extract/aroma
- Optional: 30 g agave syrup
Preheat the oven at 180 degrees Celsius. Put the banana, quark, eggs, vanilla extract (if agave syrup, add this as well) in a blender and mix it until it is a smooth mix. Pour the mixture into a bowl and add the cocoa powder, flour and baking powder. Mix everything well, either with a whisk, a spatula or with a mixer. Chop the dark chocolate into small pieces and add this as well. Put a baking sheet in a cake tin and add the cake batter in the tin. Put this in the oven for about 45 minutes. Let it cool down a bit before serving.
Options: add some raspberries in the batter, this will give it a nice sweet and a bit of a sour taste!
