Broccoli Soup

We love a bowl of homemade soup. This is a soup we make a lot, because it’s so easy and tasty. That’s not all! Because through our dinner we often use broccoli and most of the time we put the stump of the broccoli on the side. We’ll keep these for later for making this soup. Ideal, because this way you can use everything from the whole broccoli. We always like to leave the soup a little thicker, but that’s up to you. 

Ingredients:

  • 1 onion
  • 500 grams of broccoli
  • 125 grams of herb cream cheese
  • 2 tbsp olive oil
  • 1 litre of water
  • 1 cube of vegetable bouillon
  • 1 tbsp of black pepper

Instructions:
Chop the onion and cut the broccoli into pieces. Heat the oil in a soup pan and fry the onion until golden brown. Add the broccoli and the water with the vegetable stock. Let the soup with the lid on the pan simmer for 15 minutes. Then puree the soup with the hand blender. Add the herb cream cheese and stir well into the soup. Season the soup with some pepper.

Options: 
Add some feta cheese
