Blueberry Vanilla Quark Rolls

We have already shared this recipe in the coconut and strawberry variant, but this was so tasty that another version of this recipe needs to be shared. The combination of blueberries and vanilla is always a taste pleasure, so why not change the strawberries and coconut for this? 

And what we really like most about this recipe is that it’s so easy to make.

Make it on a Sunday and you have a tasty snack for work all week. If you have holiday these quark rolls are perfect for breakfast: take 1 quark roll and add some yogurt and muesli and you are satiated for the whole morning. 

Ingredients for 12 Quark Rolls:

  • 2 eggs
  • 1 vanille flavour shot (we always use the flavour shots of Personal Protein)
  • 1 tbsp olive oil
  • 250 grams of low fat quark
  • 250 grams of flour
  • 2 tsp baking powder
  • A lot of blueberries

Instructions:

Preheat the oven to 180 degrees. Line a baking tin with baking paper. Whisk the eggs foamy. Then add the low fat quark, olive oil, coconut shot and baking powder.  Sieve the flour and baking powder through the wet mixture. Cut the strawberries into small pieces and add these to the mix as well. Stir it well. Using a spoon, divide 12 pieces of the batter over the baking paper. Put the baking tin in the oven and bake for 20 minutes until golden brown.  

Optional: if you don’t have flavour shots you can also buy a quark with a flavour. Such as vanilla quark. 

Nutritional value per piece:

124 calories – 2.4 g fat of which 0.5 saturated – 19.5 g carbohydrates of which 1.2 g fibre and 2.7 g of sugar – 5.8 g of protein
