Avocado Sandwich with Mushrooms
One of our favourite lunch is avocado toast. We think you all love that, right? But it is even more tasteful to add some mushrooms to your toast. After this lunch you are satisfied for a long time. So you have the energy to keep firing until dinner.
Ingredients for 2 sandwiches:
- Any bread that you like! We used a whole wheat piece of bread (from Albert Heijn)
- 1 avocado
- Juice 1/2 lemon
- A pinch of salt
- A pinch of chili flakes
- A pinch of cumin
- A pinch of black pepper
- 250 g of mushrooms
- 1 teaspoon of olive oil
Peel the avocado and put it in a small bowl. Mash it with a fork. Add the lemon juice, salt, chili flakes and cumin. Mix everything together until you get a nice texture.
Heat the olive oil in a pan. Cut the mushrooms in 4 pieces and add it to the pan. Bake the mushrooms for about 5 minutes. Add some black pepper. Set aside when they are cooked.
Cut the bread open and spread the avocado on it. Finish it with the mushrooms.
